&lt;p&gt;The biscuits cakes are the easiest for me, and in the meanwhile, delicious! Please read this recipe that pleased me very much and also my family.&lt;br/&gt;

&lt;p&gt;Ingredients&lt;/p&gt;

&lt;p&gt;    Ingredients:&lt;br/&gt;
    400 grams of tender biscuits (petit beurre)&lt;br/&gt;
    250 ml coffee&lt;br/&gt;
    Vanilla cream:&lt;br/&gt;
    500 ml milk&lt;br/&gt;
    4 tablespoons corn starch (60 grams)&lt;br/&gt;
    180 gr sugar&lt;br/&gt;
    50 g butter&lt;br/&gt;
    4 eggs&lt;br/&gt;
    1 vanilla sugar&lt;br/&gt;
    For the garnish:&lt;br/&gt;
    300 ml whipping cream&lt;br/&gt;
    2 tablespoons powdered sugar&lt;/p&gt;

&lt;p&gt;Instructions&lt;/p&gt;

&lt;p&gt;    Cream:&lt;br/&gt;
    Separate egg whites from yolks and whip them with a pinch of salt until stiff,then refrigerate them until we make the cream filing .&lt;br/&gt;
    Put yolks in bowl and mix them with cornstarch and 150 ml milk until cornstarch dissolves well.&lt;br/&gt;
    In a saucepan put the rest of the milk, mixed with sugar, and put on low heat to heat it.&lt;br/&gt;
    When is hot, pour over the egg yolks in a thin continuous stirring (be careful not to curdle the eggs). Pour back into the saucepan and put it back on heat stirring until makes bubbles and begins to thicken. Put the saucepan aside and add in butter and whipped egg whites, using a whisk. Put back on heat and simmer 2 minutes stirring so it does not stick.&lt;br/&gt;
    Assembling the cake:&lt;br/&gt;
    Make a coffee and let it cool. Slightly sweeten with sugar as desired.&lt;br/&gt;
    Prepare a square plate to align biscuits.&lt;br/&gt;
    Soak each biscuit in coffee one second (I used petit beurre biscuits because they absorb very fast the liquid) and align them on the plate.&lt;br/&gt;
    After I put a row of crackers, pour a third of the cream then put another layer of biscuits and so on until you finish cream. I had 4 layers crackers and 3 of cream filing, the top layer must be crackers.&lt;br/&gt;
    Whip cream with 2 tablespoons powdered sugar and garnish the cake with it, then powder cocoa on top and put some cherries in syrup.&lt;br/&gt;
    It is incredibly good, the biscuits are soft and flavored coffee feels very easy. It is a kind of Tiramisu with biscuits:-). A special dessert, easy and delicious!&lt;br/&gt;

&lt;p&gt;First of all I want to thank to Paula Gafitescu for this wonderful recipe, because, since I saw it, I wanted on my plate. I changed just a little bit the ingredients, but the idea is the same! The recipe is very simple, the dough is very flexible and easy to work and the fillingdivine! Of course who likes the spinach in combination with cheese. You have to try it!&lt;br/&gt;

Serves: 12&lt;/p&gt;

&lt;p&gt;Ingredients&lt;/p&gt;

&lt;p&gt;    So, you will need: (for a baking tray 20cm/30 cm or 2 round of 20 cm diameter):&lt;br/&gt;
    For the dough:&lt;br/&gt;
    1 egg&lt;br/&gt;
    500 gr all purpose flour&lt;br/&gt;
    220 ml water&lt;br/&gt;
    1 tsp. salt&lt;br/&gt;
    100 gr butter (1 stick)&lt;br/&gt;
    For the filling:&lt;br/&gt;
    400 gr spinach (frozen and defrosted)&lt;br/&gt;
    ½ bunch fresh dill&lt;br/&gt;
    1 onion&lt;br/&gt;
    1 carrot&lt;br/&gt;
    250 gr feta cheese (or 150 gr feta and 100 gr cheddar cheese)&lt;br/&gt;
    100 ml sour cream&lt;br/&gt;
    4 eggs (1 egg yolk will be for oiling the top)&lt;br/&gt;
    3 tbsp. milk (for oiling too)&lt;br/&gt;
    salt and pepper for your taste&lt;/p&gt;

&lt;p&gt;    First of all, defrost the spinach and drain it very well.&lt;br/&gt;
    In a large bowl mix the butter and flour together until crumble (the butter must be at room temperature).&lt;br/&gt;
    Then add in the egg (slightly beaten), water and salt and knead the dough until is not sticky anymore.&lt;br/&gt;
    Put the dough in the fridge, covered in plastic, until we make the filling.&lt;br/&gt;
    Filling:&lt;br/&gt;
    In a bowl mix the spinach (you should defrost the spinach and drain it very well before, usually I defrost it in the microwave about 10  15 min., thats easier) with the shredded cheese, sour cream, chopped dill, chopped onion and shredded carrots (very thin).&lt;br/&gt;
    Beat the eggs and stir in (but keep one yolk for oiling the surface of the pie)&lt;br/&gt;
    Season with salt and pepper as for your taste.&lt;br/&gt;
    I used 250 gr feta cheese but in the filling you can add 150 gr feta and 100 gr cheddar cheese (the cheddar makes more homogenous the filling)&lt;br/&gt;
    Preheat the oven at 180ºC.&lt;br/&gt;
    Now you can take out the dough from the fridge and divide it in two, one piece is for the bottom of the pie and should be bigger, the other one will be for the top of the pie and will be smaller. From the second one we will make strips and we will make a grid.&lt;br/&gt;
    Make the first sheet with the rolling pin a little bit thicker, then oil the tray and put it inside covering the sides of the tray.&lt;br/&gt;
    Add in the filling, then make the other sheet and cut strips. Interpolate them on the top of the pie and spread over the yolk mixed with 3 tbsp. of milk.&lt;br/&gt;
    Cook until is nice roasted.&lt;br/&gt;
    Enjoy! it is delightful!&lt;/p&gt;
